Job Summary:

Bourbon & Bones Chophouse & Bar - Square One Concepts, is seeking a highly skilled and experienced Master Butcher to join the team. As a Master Butcher at Bourbon & Bones Chophouse & Bar, you will play a pivotal role in ensuring the highest quality of meats and seafood are delivered to our kitchen. You will be responsible for sourcing, preparing, and maintaining an inventory of prime cuts, while collaborating closely with our Executive Chef and culinary team. This role requires expert knowledge of meat selection, butchery techniques, and a keen eye for detail. The Master Butcher will also oversee the training and development of junior butchers and ensure compliance with all health and safety regulations.

Duties/Responsibilities:

  • Source and select premium quality meats and seafood from trusted suppliers, ensuring the highest standards are maintained.
  • Utilize expert knowledge of various cuts of meat, butchery techniques, and aging methods to provide an exceptional range of products.
  • Perform precise and efficient butchery, including portioning, trimming, deboning, and tying meat cuts according to specific recipes and customer requests.
  • Ensure proper storage, organization, and rotation of inventory to maintain freshness and minimize waste.
  • Collaborate with the executive chef and culinary team to develop new menu items, specials, and customized cuts to meet guest preferences.
  • Maintain a clean and sanitary work area and adhering to food safety and sanitation standards at all times.
  • Train and mentor junior butchers, providing guidance on proper butchery techniques, knife skills, and product knowledge.
  • Stay up to date with industry trends, new products, and techniques, continuously seeking opportunities to enhance the butchery program.
  • Assist in conducting regular inventory counts and maintaining accurate records of product usage, ensuring proper stock levels are maintained.
  • Adhere to all health and safety regulations, including proper handling and disposal of hazardous materials, such as sharp objects and chemicals.
  • Performs other related duties as assigned.
Requirements:

Required Skills/Abilities:

  • Must be eighteen years old.
  • Proven experience as a Master Butcher or similar role in a high-end restaurant or butcher shop.
  • Exceptional knowledge of meat cuts, butchery techniques, aging methods, and meat handling procedures
  • Full-time availability
  • Ability to work in a cold, confined temperature-controlled environment for 8 hours
  • Willingness to commute to different locations within the valley
  • Strong understanding of quality control measures, including selecting and inspecting meats for freshness, texture, and marbling.
  • Proficient knife skills and ability to operate and maintain butchery equipment effectively including band saw experience.
  • Excellent organizational skills, with the ability to manage inventory and prioritize tasks efficiently.
  • Strong attention to detail and a commitment to delivering products of the highest quality.
  • Ability to work in a fast-paced environment, maintaining composure and delivering consistent results.
  • Effective communication skills, with the ability to collaborate with the culinary team and interact with suppliers and guests.
  • Familiarity with food safety and sanitation regulations, including HACCP guidelines.
  • A passion for culinary arts and a dedication to staying informed about industry trends and innovations.
  • Excellent communication and interpersonal skills to work effectively with the culinary team and other staff members.
  • In-depth knowledge of food safety requirements of restaurants
  • Excellent communication and time- management skills
  • Must be able to work flexible hours, including evening, weekends, and holidays.
  • Must have a valid Food Handlers Certification

Education and Experience:

  • Minimum of 2 years
  • Culinary degree or equivalent certification preferred.

Physical Requirements:

  • Prolonged periods of standing and working in a kitchen.
  • Exposure to extreme heat, steam, and cold is present in a kitchen environment.
  • Must be able to lift up to 50 pounds or more at times.
  • Must be able to work late nights and unpredictable hours.
  • Manual dexterity to cut and chop foods and perform other related tasks.
